Coconut French Toast and Body Attack 75

I’m officially a dirtball.  At this very moment, I’m gearing up for today’s BodyJam class.  But here’s the dirty part: I still haven’t showered from last night’s workout.


Oh, Les, you know my body so well...

As you can see from my Garmin Connect report, it wasn’t just some easy-peasy workout, either.  I was a sweaty mess, my booty is sore, and I LOVED the new release!  However, at track four, a super plyometric-heavy track, my tummy started going nuts.  And that’s when I knew I had to GET OUTTA THERE! It felt like my body was a soda can about ready to explode.

So I booked it.

Moments later, as I was washing my hands, feeling so much better post-bathroom break, I raced back in to finish the tail end of the arm conditioning track. Walking burpees…. not my friend.

After getting home, whipping up a fantastic, cheesey, melty, eggplanty dinner (Save that for later), I realized that the next time I’d leave the house would be for another workout. So I washed my face, did a little mini-body wipedown, and said “Fuggetaboutit!”

Yup.  Next morning, still no shower.  But, at least there’s coconut french toast on the menu.

My past experiences cooking with coconut oil have been kind of meh.  I realize now that it’s because I was cooking the wrong treats in that coconut oil. I bucked up, grabbed some coconut shreds, and said “Let’s DO THIS!”

When I scrambled together my egg batter, I used 2 EB eggs, pumpkin spice, cinnamon, AND sweetened coconut shreds (though it would’ve been just as tasty sans sweetened, I’m sure).  Also, next time, I think I’ll drop a little bit of almond extract in the mix, just for a flavor punch.

Didn’t matter, the coconut was the star of the show. And cooking in coconut oil WITH coconut shreds… can’t beat it.

There was coconuts in the batter, coconut shreds on top, chia seeds sprinkled for a nutritional boost, and LOTS of lite butter flavored syrup (it’s all I have left in the apartment!).  Good to the last bite.

Or, in my case, the last lick. Because I licked my plate clean, not unlike an animal.

At least animals don’t have to shower.

Ryan’s a pancake man, through and through, but I’m ALL about french toast.  Somehow, though, I’m sure we’ll make it work.


Don’t Skimp on the Shrimp (Omelet)

And that place is in my kitchen. Or, I guess, now, my belly.  But first…

CX30 + BodyCombat = WHOAH!

Les Mills, you’ve done it again.  O2 Fitness Clubs launched the newest releases of their infamous Body____ classes and, since Saturday, I’ve tried BodyJam, BodyCombat, and CX30.  Each one was more hardcore than the last.

Yesterday, it was a double whammy. CX30 was up first, followed by BodyCombat.  And I kept the HRM on the whole time.  An hour and a half later, 1,227 calories blasted, and approximately a hand towel’s worth of sweat drenching my body, I felt like a superwoman.  I also felt like I needed to eat a house.  I didn’t, I enjoyed a homemade whole wheat, eggplant, spinach, Parmesan, mozzarella, and Sockarooni pizza (I should’ve shaped it like a house).  And then, with the help of my new favorite app, I slept like a rock.

But today is a new day.  A day that I was craving seafood.  The pickin’s at home were slim, but there was something beautiful in the fridge.  Well, a few somethings beautiful.

Come to MAMA!!

Inspired by this Shrimp and Avocado Omelet recipe from Whole Foods, I scrambled the heck out of two eggs, chopped my ingredients, and hoped for the best as the eggs fried in some EVOO.


I have to use up my never-ending supply of spinach, so I added that to the innards of this omelet, along with the (pre-cooked) shrimp (from Target… not exactly the local fishmarket, but it’ll do in a pinch.)

This totally screams “throw me inside some eggs!”

And, after a flip and a fill, followed by a fold, this omelet was ready to be topped with the always-decadent combination of tomato and avocado.

This protein-packed omelet will certainly get me through the rest of the day and, though it was jam-packed with shrimp, I can’t help but feel like I have a seafood itch that needs scratching. And I know just the shellfish to scratch that itch.

Do you eat seafood? If so, what’s your favorite? ANYTHING I CAN MAKE?!

I don’t think I even tried fish (other than canned tuna) until the past year or so….  Now it’s become one of my favorite ways to eat flavorful AND healthy meals.

Responding to Les Mills Motivational Posters

Good evening ladies and gents!!

Today, after work, I had two things on my mind: Zumba and Dinner.

While shopping for dinner, I passed what I’ll consider a sign from the powers that be, and stopped thinking about food entirely.

Wine sale? Don't mind if I do.

Clearly, I had to do something really stupid, because when life hands you lemons (or carts full of discount wine), make lemonade (or buy it.)

I picked up a somewhat classy bottle of Bogle Riesling (gotta celebrate the Summer of Riesling, right?) and an opposite-of-classy bottle of “Mixed Berry” Arbor Mist.  Because sometimes… well, you gotta throw back a bottle of ridiculously cheap wine, college lady style.  I’m hoping that my friend, Veronika, will wanna do a little wine tasting like we did before…. Then I can sneak in that Arbor Mist and see where the night goes!

Zumba Nation!!!!!

Zumba was a success, for the most part.  But I’ll be honest, by the end of the workout, I was feeling kinda ornery and tender in the ankle/knee region.  And as I walked outta the gym, I passed these godforsaken motivational posters that I always see.  Even though I love working out, by the end, I mostly end up hateful towards anything telling me to work harder.  These posters are no exception.  I thought I’d share with you my visceral reactions to these Les Mills Motivational Posters (note, these are all post-workout thoughts, I love motivation and Les Mills programs).

Though these posters always inspire me when I’m going into the group fitness room, when I see them on the way out…. Let’s just say that they’re lucky they haven’t been ripped off the wall.

I think I’ll take the day off the gym tomorrow, my ankle was acting up by the end of Zumba and I’d love some time to finally unpack after this wild wedding weekend.

Feeling like a Superhero!!

Good evening friends and neighbors!! It’s likely too late for most of you, other than the owls like myself (though let’s face it, despite my best wishes, I’m more of an early bird anyway).  For the few of you that are up, though, you’re probably doing something cool like I am.  Translation: streaming netflix and scanning the internet for stuff.

This evening, perhaps spawned by my after-work group fitness class, I was inspired when I came upon this classic gem:

My brothers and I used to watch this growing up and, like all good things do, it finally ended up on Netflix.  I’ll be honest, though, as I’m watching it, I can’t help but think that there were a few “X-Men” (and women) who really weren’t anything to write home about….

Nerdy and Hairy

I think Ocean City does this every year for Independence Day, just saying.

And Jubilee…. well, here’s the thing, I love fireworks just as much as the next girl.  But if that was my “superpower”, I think I’d just stick to New Years Eve shows.  Luckily, there are characters like Storm and Jean Grey to keep things interesting.

Anyway, tonight’s workout left me feeling kind of like a superhero myself!!

BodyCombat’s new release came out this past weekend at my gym, and it ROCKED!!

823 calories, one hour, heck yes!

The new release was AWESOME, and the track list was also top notch.

My very favorite was probably the Drummer Boy remix, KILLER on the legs, lots of eskivas and lunges, but an awesome beat that kept me going.

I enjoyed it more than I do most BodyCombat classes, especially after the last time that I took it and twisted my ankle. But I took care to stay solid on my feet, and felt great throughout it.

After such a great workout, I was excited for a delicious meal with the beau and his father and step mother.

We went to Carolina Ale House and, despite the inconsistent service (she was incredibly attentive with drinks, much less so with food and the check), I enjoyed every bite!

I avoided the rice side, and paired the meal with a DELICIOUS couple of beers.  Oskar Blues Dale’s Pale Ale (a beer I’d only seen before at festivals!) and the New Belgium Ranger IPA (one of my favorites from the Tour de Fat!) Good to the last drop, and paired so nicely with the fish!


And now, after watching my Monday night cartoon fix…. it’s off to bed!

I do, all the time.  I think I’d LOVE to be a shapeshifter, or have Storm’s ability to control the weather… If only.

BodyJam: Booty Blast Edition

Good morning lovely ladies and gentlemen!

It’s a GORGEOUS Sunday morning and, after looking at a forecast for nasty weather all weekend, I’m happy to say that was the opposite of what really happened.  It has only deepened my belief that I can trust the weather man/woman as far as I can throw them (which, despite how jacked I am, is not very far).

Maybe the weather person weighs 10 lbs? If so, I'm set.

After a quick breakfast of cinnamon cranberry pancakes (using the complicated recipe of Hungry Jack Pancake and Waffle Complete Wheat Blends + cinnamon + Ocean Spray Craisins) and some sugar free syrup, I was fueled enough to hit the gym, and hit it hard.  Despite having just spent my rent’s worth of money on workout clothes at the Nordstrom Anniversary Sale (which starts July 15, GET YOUR SHOPPING SHOES READY, FOLKS!), I donned my normal workout attire, not really expecting too much from this workout.  You know how sometimes you go into the gym and it feels almost like your duty?  This was one of those days.

Well, a few minutes into the BodyJam class, that opinion quickly changed. The class was with Alison C., my favorite instructor at O2 Fitness in Chapel Hill because she makes everyone so comfortable in getting down and dirty with their dance moves.  We were popping, we were locking, dropping, dripping, snapping, spinning, I think maybe someone taught us how to dougie (if you don’t know how to dougie, use this instructional video.everyone will think you’re cooler than you already are, especially if they watch you practicing.)

We finished the class with a house/tribal set that DESTROYED my booty.  There were a lot of kicks, jumps, and a weird scoop leg move that blasted my booty.  The whole rest of the day, every time I sat down/stood back up, I got that sore reminder of how smooth my moves were.  Fantastic booty burn.  I complimented that blast with 30 minutes on the reclined bicycle, reading my book du jour, The Justice Game by Randy Singer. It was great because I didn’t even realize how long I was riding, and VOILA it was pool time!

Before the pool, we stopped by Quiznos where I picked up a small toasted Veggie Caprese and some baked Lay’s.

More pooltime, more sunshine, more reading, and it was time for dinner! (I know, my life revolves around food.)  Having burned over a thousand calories at my workout earlier, I felt as though I had some room to indulge.

99 cent margaritas? Don't mind if I do.

Which, of course, was followed by an UNBELIEVABLY GOOD meal.

This has inspired me to make a chile relleno of my own ASAP! I don’t know what I’ve been doing avoiding these my whole life but peppers + mexican fillings = dream come true.

We migrated to Roth Brewing Company (which will be a separate post entirely), had a blast, and finished the night off with some serious dance battles on XBox Kinect.  Never in my life have I enjoyed playing a “video game” before!!  I whipped out a few of those BodyJam moves, and (of course) went undefeated.

Best night I’ve had in the Triangle in some time, and was filled with friends, food, and (luckily for my waistline) fitness!

Lunchspiration and Zumba Gear!

After coming back from a long weekend, it’s always hard for me to get back into the swing of eating things.  My cupboards are usually bare, I did my best to empty out the fridge before we left, and I’m so exhausted that the idea of a long grocery trip is often beaten by the idea of a nap.  These past few days were no different.

I flew back to RDU on a slightly later flight than usual and arrived around 1:25, so was able to be back to work by 2pm.  Truly, the Southwest Airlines route from RDU to Philly and back is unbelievably easy, frequently very cheap/on sale, and never takes longer than 1.5 hours.  I can’t even talk about how convenient it’s made living 300+ miles away from my family.  But, as they’ve yet to add personal masseuses and white noise machines on the flight, I still find myself tuckered out after a day of traveling.  I managed to grab some of the “essentials” last night at the store:

Truly, though, I was just getting what was on sale as I knew, fairly soon, the changing of the sales would occur (as it does every Wednesday).  That left me with a still fairly bare cupboard.  Then, right before lunch, it hit me.

I’ve tried hummus of all kinds, Athenos, non-name brand, Trader Joes, Harris Teeter…. they don’t hold a candle to the creaminess of Sabra, and the rich nutty taste of this particular flavor (Roasted Pine Nut).  Now it’s gluten free, too, which doesn’t really effect THIS GIRL too much, but worth mentioning for everyone else out there!

Zumba Nation, baby!

A brand new Zumba shirt (and bracelet, not pictured!) from the ladies over at Zumba Goodness.  Big thanks to the girls, Sarah and Kasey, and congratulations to them for a year in the Zum-biz!!

Can’t wait until next Tuesday when I can rock it out at Zumba class at O2 Fitness (the new instructor KICKED MY ASS last week, so I’m ready for her to bring it again.)

Workout plans tonight are a little tough, as I’m on call from 5pm-9am tomorrow morning and have to be by my phone/a computer all night…. maybe that’ll give me some time to whip up a healthy meal and finally unpack my life as I’ve been living out of my suitcase lately.

How do you get inspiration for lunch time variety? I’ll be honest, I saw a tweet from FlatoutBread and another from Sabra Hummus  and it just hit me.

Do you have any gear particular to the workouts you do?  I have seen instructors rocking the official Les Mills gear, and I want the Body Attack shirts SO BAD. So if anyone else wants a 6’1″ blonde (who’s currently rocking quite the suntan) to model their Les Mills attire…. just gimme a call.  Or a tweet.

Back to work, overtime today to make up for my unbearable lateness of being yesterday.
